Christmas Chip Cookies…and another party!

So, tonight is Brian’s work Christmas Party. Dinner, Dessert, and Dirty Santa. Last year we ended up with two great bottles of wine. Hopefully this year we’ll end up just as lucky! I actually want to steal my own gift.  With thoughts of Jayme and Lauren in mind, I got a great Riesling from the Willamette Valley in Oregon. They swear by the goodness of the wines from this region! Now if I can just work it out to where I bring home my own gift… (check back later to see what awesome – or not so awesome – swag we bring home!)

I was in charge of bringing a dessert. So, I packed a tray with some of the Cookie Exchange cookies and then made a small batch of what I like to call Christmas Chip Cookies. Delicious!

Christmas Chip Cookies

1 stick of non-hydrogenated margarine

2 tbsp non-hydrogenated shortening (makes the cookies a bit crisp!)

1/2 cup sugar

1/2 cup brown sugar

1 egg replacer

1 tsp vanilla

1 tsp baking soda

1 cup flour

1/2 cup oats

1/2 cup chopped walnuts

1/2 cup dried cranberries

1/4 cup sweet coconut flakes

1/2 bag of vegan mini chocolate chips

Preheat oven to 350. Cream butter and shortening. Add sugars and beat for 2-3 minutes longer. Add egg replacer and vanilla. Beat a bit. In a separate bowl combine baking powder and flour. Beat slowly into wet ingredients. By hand mix in the oats, walnuts, dried cranberries, coconut flakes, and mini chips. Bake for 10 minutes and let cook on a cooling rack. Yum and they turn out kind of Christmas-y!
