Homemade Vegan Mixed Berry Granola

On a work trip a couple of weeks ago, I got to work with a new colleague and she surprised me with a little happy by making me some homemade granola. On the plan ride home I’m pretty sure I ate the whole jar full and wanted more! It was so- delicious. Upon arriving home on Friday, the first thing I did was head to the market to purchase all the necessary ingredients for a batch! I did modify the recipe a bit, instead of honey and I opted for Agave Nectar (to make it totally vegan). I also decided to do a couple other flavor modifications, but it would be super easy to do a TON of different variations of this recipe!

I decided to go with Mixed Berry Orange Granola for this batch. (I’ve listed some other variations below also)

Mixed Berry Orange Granola

4 cups of old-fashioned rolled oats

1/2 cup coarsely chopped pecans

1/2 cup of coarsely chopped walnuts

3/4 cup of dried Mixed Berry fruits

1/2 cup of sweetened coconut flakes

1/2 tsp ground cinnamon

1/3 cup of vegetable oil

1/4 cup of Agave Nectar

1/2 cup of brown (light or dark) sugar

1 tsp orange extract


(Makes 8 cups) Preheat oven to 325. Lightly coat a large baking sheet with cooking spray. In a large bowl stir together oats, pecans, walnuts, mixed berries, coconut, and cinnamon.

In a small saucepan, combine oil, sugar, and agave nectar over medium heat and bring to a boil. Once boiling, remove from heat and stir in orange extract. Drizzle this mixture over oat mixture and mix until fully coated. Spread granola on the cookie sheet evenly and put in the oven. Bake for 25 min, or until golden brown. About half-way through flip the granola. Let cool completely before breaking into chunks and storing in an airtight container.

Other variations:

Rocky Road Granola: Substitute chopped almonds for the pecans and leave out the walnuts. Sub Almond Extract for Orange Extract. Also, do not add the dried berries. Cook as directed and when cooled add in 3/4 cup of mini chocolate chips and 1/2 cup of mini marshmallows.

Almond Cherry Chip: Sub Almonds for Pecans and Walnuts and sub dried Cherries for the Mixed Dried Fruit. Also, instead of Orange Extract use Vanilla Extract.

Blueberry Crisp: Sub Dried Blueberries for the Mixed Berries and use 1/2 tsp of Vanilla Extract and 1/2 tsp Almond Extract instead of the Orange Extract.

Peppermint Patty Granola: Substitute Peppermint Extract for the Orange Extract. Leave out the mixed berries and use 3/4 cup of Andes Mint (or vegan mint chocolate squares – chipped up) chips after the granola has cooled.
