Oh My Goodness…

These are Delicious with a capital D! I have been trying to come up with a good no-bake granola bar recipe that is a little sweet (I have 5, maybe 6 sweet tooths….courtesy of growing up with a Southern Mama who bake wonderful sweet treats…almost everyday!) and on the other side a little healthy. I’ve been tinkering with this recipe for a couple weeks now and finally have perfected it to the point of sharing with everyone! So, if you have a few simple ingredients on hand and 10 minutes to spare, you can whip up a batch of these in a snap! I can think of tons of variations in flavors, but as an orangy-chocolate lover, I decided to stick with one of my stand-by flavor combos. (I think pecans, peppermint, and chocolate would also rock!)

Orangy-Chocolate No-Bake Vegan Granola Bars

2 cups of old fashioned rolled oats

2 tbsp sesame seeds

1/4 cup of unsweetened cocoa

1/4 cup of ground flax

2 tbsp unsweetened coconut flakes

1/4 cup of agave

1/4 cup of maple syrup

1/2 cup of natural peanut butter

1 tsp orange extract

Mix the oats, sesame seeds, cocoa, flax, and coconut in a large bowl. Meanwhile, in a small pot heat peanut butter, agave, and maple syrup over low heat until warm and well blended. Remove from heat an add in orange extract. Pour the wet ingredients into the dry ones and mix for a few minutes until everything is well coated. (Use a little elbow grease here!)

Line a 8×8 pan or small cookie sheet with clear plastic wrap (helps prevent sticking) and pour mixture in. Flatten down and then put in the fridge for at least 2 hours to harden. Ta Da! Didn’t I tell you this was a snap? Last, cut into 10 bars and try not to eat them all at once! …after having one, well, maybe two, I decided that some dried cherries would be a nice addition the flavor combo of this bar.
