Single Serving Protein Brownies

Do you know when you finish up a super healthy lunch (imagine a bowl full of broccoli and 5 squashes – yes, I’m trying to finish all my veggies before going out of town!) and then you just want something sweet, but not bad for you? I mean, you wouldn’t want to negate all those healthy goodies you ate for lunch! So, I took stock of my pantry and decided to make some kind of single serving brownie. I also thought a little protein powder in the mix would be good, as lunch missed this element. Here is what I came up with:

Single Serving Protein Brownies (Vegan/GF/No added Sugar)

1 T Gluten Free Flour

1T Cocoa Powder

1T Sunwarrior Chocolate Protein Powder

1/4 t Baking Powder

5 Packets of Stevia

Dash of Salt

Dash of Cinnamon

1 Flax Egg (1T ground flax + 3 T water)

1/2 t Vanilla Bean Paste

2 T Unsweetened Applesauce

1 T Chocolate Soymilk (or other non-dairy milk)

1 T Cocoa Nibs


Preheat the oven to 350. Make up the flax egg in a small container. Then, mix all the dry ingredients together in a small bowl. Add the flax egg and remaining ingredients to the dry bowl. Put in a small ramekin or baking dish and bake for 18-22 minutes (or until set). Yum!

We’ll call this one a win. It lasted all of 5 minutes. Just the right amount of sweet!
